Vegetable juices
Vegetable juices, commonly in concentrated forms, are used as coloring agents. In the USA, vegetable juices must meet the criteria defined under 21 CFR 73.260, which describes juices expressed from the mature varieties of edible vegetables. A commonly used vegetable juice for color is red cabbage juice, which contains anthocyanins.
