Colors from Around the World

As part of my role at Sensient Colors, I frequently speak about food regulations at industry events. Invariably someone will approach me afterwards wanting to know more about a particular food color mentioned in my presentation. They want to know the shade and pH range along with whether the color is permitted in the United States. After numerous inquiries, some colleagues and I collaborated on the following ‘Colors from Around the World’ guide, which is sorted by color shade. While this is not an exhaustive list, given that sources of natural color are continuously expanding, it does provide a nice snapshot of all the major food colorants used today.
